My Best Gluten Free Banana Bread Yet!

I’m not vegan anymore but I do try and make my baked things as healthy as I can while still being the best-tasting thing ever… 

This recipe was a winner. It only lasted 2 days and requests were made for more.

Here is the recipe for you guys to enjoy.

So here we go…

First things always first. Line your tin and turn the ovvvven to 180’C


Before we start we need to make the GF flour mix.

+ Get a container ready so that you can store the extra for later.

+ Mix in a bowl 600g tapioca flour & 400g Sorghum flour.



We have a thermomix at home so if you have one use it. Otherwise, you can use a blender, mix master or good old fashioned elbow grease.

Add the wet stuff first…

  1. 100g rapadura sugar
  2. 4 eggs
  3. 4 ripe bananas
  4. 60g coconut oil

Now blend this up so it’s nice and fluffy.

Now add the dry stuff

  1. 220g GF flour mix
  2. 1/2 tsp bicarb soda
  3. 1 tsp baking powder
  4. 1/2 tsp cinnamon powder (optional, but better with it)
  5. 1/4tsp nutmeg powder (optional, but better with it)

Mix it just enough that it’s combined. Pour it into the tin…



Get a little funky…

So this is where I added choc chips and hemp seeds to this bad boy.

If I had ripe pairs I would have mixed those in too…
